- 1 jalapeño pepper seeded and chopped
- 1 tbsp canola oil
- 1 sweet potato peeled and cut into 1’ chunks
- 2 tbsp sweet curry powder
- 2 carrot(s) peeled and cut into 1-inch chunks
- 1 red bell pepper seeded and cut into 1-inch chunks
- 6 oz fresh green beans trimmed and snapped in half, (about 2 handfuls)
- 4 green onion (scallion) thinly sliced, (white and green parts)
- 0.5 cup unsweetened coconut milk beverage
- 1 small onion chopped
- 1 cup low sodium vegetable broth low-sodium
- 1 tbsp corn starch
- 2 tbsp cilantro chopped
- 1 tsp paprika
- 0.5 tsp salt optional
- 0.25 tsp black pepper
