Ingredients (15)
- 2 tablespoons extra-virgin olive oil
- 4 ears fresh corn, shucked (or about 3 cups frozen corn, thawed)
- 1 teaspoon fine salt, divided
- 1 small red onion, chopped
- 1 poblano pepper, chopped
- 1 red bell pepper, chopped
- Optional: 1 medium jalapeño, ribs and seeds removed and chopped
- 2 cloves garlic, pressed or minced
- 2 cups fresh or frozen lima beans*, thawed under cool running water
- 2 tablespoons butter, plus more for serving
- Freshly ground black pepper, to taste
- Optional: Pinch of cayenne (for even more spice)
- 1/4 cup chopped fresh basil, divided
- 2 tablespoons chopped green onion
- Flaky sea salt or kosher salt, for serving
