Ingredients (15)
- 4 cups precooked chicken
- 1 large can green enchilada sauce
- 2 dozen corn tortillas
- 4 T. olive oil
- 1 red pepper
- 1 medium onion
- 1 jalapeño
- 1 can Bush’s black beans
- 1/2 about 6 oz: jar Corn and Chili Salsa from Trader Joe’s
- 1 T. cumin
- 1 tsp. chili powder
- salt and pepper to taste
- 2 cups grated sharp Cheddar cheese
- 2 cups grated Jack cheese
- 2 medium sweet potatoes
