  • I tripled the original recipe because I figured I'd screw up a bunch of them... I was right.
  • 3 Cups Chickpea flour
  • 3 1/4 Cups water
  • 2 Teaspoons kosher salt (or 1 Teaspoon regular)
  • 1 Teaspoon whole cumin seeds or 1/2 Teaspoon ground cumin
  • 1/4 Cup olive oil (plus a bit more for the pan)
  • Chicken Curry:
  • 2.5 pounds boneless skinless chicken thighs
  • 1 medium onion, diced
  • 1 red pepper, diced
  • 2 inches fresh ginger, minced or grated
  • 3 cloves garlic, minced
  • 3 Tablespoons neutral oil (like canola)
  • 3 Tablespoons yellow curry powder
  • 2 12 ounce jars of mango chutney
  • 1 15 ounce can coconut milk
  • 2 Cups water
  • 2 Cups golden raisins
  • 2 Tablespoons brown sugar
  • Pinch of salt
