- 1 small cucumber peeled, seeded and thinly sliced into strips
- 6 iceberg or bibb lettuce leaves
- 1 mango peeled and thinly sliced
- 2 cup warm water
- 6 spring roll wrappers 0.25 ounce each
- 12 oz extra firm tofu
- 1 tsp Splenda Brown Sugar blend
- 0.5 cup no-sugar-added apricot preserves sugar-free
- 1 tbsp soy sauce lower sodium
- 0.5 tsp Thai style chili garlic sauce
