- 2 tbsp lime juice
- 1 tsp honey
- 2 tbsp orange juice
- 1 Juice of 1 lime
- 1 cup quinoa dry, rinsed well
- 2 tbsp cilantro leaves chopped
- 0.5 lbs scallops
- 0.5 lbs medium shrimp peeled and devined
- 0.5 cup cooked black beans or edamame
- 1 Olive oil (for marinating and brushing)
- 1 jalapeño pepper stemmed and finely chopped
- 0.5 red bell pepper chopped
- 1 roma (plum) tomatoes seeded and chopped
- 0.25 tsp cayenne pepper
- 1 tbsp extra virgin olive oil
- 1 Sea salt, to taste
