- 2 cup whole wheat rotini or penne pasta uncooked
- 1 lbs asparagus ends trimmed
- 1.5 tbsp olive oil
- 2 zucchini sliced 1/4 inch thick lengthwise
- 1 small eggplant peeled and sliced 1/2 inch thick lengthwise
- 1 nonstick cooking spray
- 0.5 tsp black pepper
