  • 2 medium eggplants (skinned and cut into cubes)
  • 2 tablespoons olive oil
  • 2 -3 Italian sausages (skinned & broken into pieces)
  • 14 grape or cherry tomatoes (halved)*
  • 1/2 teaspoon oregano
  • 4-5 fresh basil leaves (or 1/4 - 1/2 teaspoon dried)
  • 1-2 pinches hot pepper flakes if desired
  • 1/4 cup water
  • * 1 can of Pelati Tomatoes (nothing added) is a good substitute.:
  • EXTRAS:
  • freshly grated parmesan cheese for topping
  • 3-4 cups cooked pasta of choice
