
Tomato, Eggplant and Sausage Pasta
Ingredients (12)
- 2 medium eggplants (skinned and cut into cubes)
- 2 tablespoons olive oil
- 2 -3 Italian sausages (skinned & broken into pieces)
- 14 grape or cherry tomatoes (halved)*
- 1/2 teaspoon oregano
- 4-5 fresh basil leaves (or 1/4 - 1/2 teaspoon dried)
- 1-2 pinches hot pepper flakes if desired
- 1/4 cup water
- * 1 can of Pelati Tomatoes (nothing added) is a good substitute.:
- EXTRAS:
- freshly grated parmesan cheese for topping
- 3-4 cups cooked pasta of choice
