Simple Sautéed Greens
Italian cooks know that olive oil, garlic and a pinch of salt can elevate just about any ingredient into something special.
Easy to make ahead; just reheat before serving.
- 1 1/2 pound fresh spinach
- 2 tablespoon olive oil
- 2 large garlic cloves
- 1/4 teaspoon salt
- 1/2 cup chicken broth
- Heat oil in a large skillet over medium heat. Add garlic; sauté 1 minute. Add spinach, in batches, turning with tongs until wilted. Sprinkle with salt. Add broth and stir to incorporate. Cook, stirring occasionally, 5 to 8 minutes, until all of the liquid has evaporated.
