  • 2 cups cherry tomatoes
  • 1 English cucumber
  • 1/2 red pepper
  • 2 cups  pitted Kalamata olives
  • 1 medium red onion
  • 1 cup pepperoncinis
  • 8 oz  good quality feta cheese
  • Fresh basil
  • Coarse ground black pepper
  • For the dressing: 1/3 cup red wine vinegar
  • ½ cup olive oil
  • 1 tsp. dried oregano
  • kosher salt and freshly ground black pepper
  • 2 tsp. fresh basil
  • 2 Tbsp. freshly squeezed lemon juice
  • 2 cloves of garlic
  • Pinch of sugar
