- 2 cups Florida lettuce, shredded
- 4 Florida radishes, sliced thin
- 2 cups Florida sweet corn salsa
- 2 eggs, beaten
- 1 cup all-purpose flour
- 1 cup bread crumbs
- 2 tablespoons all-purpose seasoning (such as Everglades)
- Vegetable oil for frying
- 1 cup cotija cheese (or similar crumbling cheese)
- 10 small corn tortillas
- Sea salt and fresh ground pepper, to taste
