- 2 tablespoons oil
- 2 shallots, sliced thin
- 2 bunches scallions, sliced thin
- 1 jalepeño chile, sliced thin
- For garnish:
- 1 large cucumber, seeds removed and cut into 1/2-inch slices
- Cilantro, roughly chopped
- Sriracha or chile-garlic sauce
- Freshly squeezed lime juice
