  • for the dhansak - lentils and veggies:
  • 1 cup arhar dal
  • ¼ cup moong dal
  • ¼ cup masoor dal
  • 1 large onion
  • 4 to 5 medium sized tomatoes
  • 2 medium size potatoes
  • 2 to 3 medium-size eggplant (baingan)
  • 4 tablespoon fresh fenugreek leaves
  • 3 to 4 teaspoon tamarind pulp
  • 2 to 3 tablespoon ghee
  • 4 cups water
  • salt to taste
  • for the dhansak masala:
  • 12 garlic cloves
  • 1 inch ginger
  • 1.5 teaspoon cumin seeds
  • 1 large cinnamon of 2 inches
  • 1 tablespoon coriander seeds
  • 1 to 2 dry red chilies
  • 8 to 9 cloves
  • 2 green chilies
