Lucknowi Biryani

- for cooking rice:
- 300 grams sella basmati rice
- 5 to 6 cups water
- 1 teaspoon salt
- 1 tej patta
- 2 green cardamoms
- ½ inch cinnamon
- 2 cloves
- for veg gravy:
- 2 to 2.5 cups chopped mixed vegetables
- ⅓ cup green peas
- 2 tablespoons Ghee
- 1 tej patta
- 2 cloves
- 1 inch cinnamon
- 2 black cardamoms
- 1 mace flower
- 2 green cardamoms
- 85 grams onions
- 1 teaspoon Ginger-Garlic Paste
- 1 teaspoon red chilli powder
- 1 teaspoon Garam Masala Powder
- 1 cup water
- ¼ cup Curd
- salt
- for layering awadhi biryani:
- 1 pinch of saffron strands
- ⅓ cup warm milk
- ½ to 1 tablespoon Ghee
- 2 teaspoons kewra water
- ⅓ cup of the stock in which the rice was cooked
- for garnish:
- ½ cup thinly sliced onions
- 1 tablespoon Ghee
