- 6 tbsp sugar
- 3 tbsp cornstarch
- Kosher salt
- 7 oz. bittersweet chocolate
- 2 1/2 tbsp unsalted butter
- FOR THE PASTRY DOUGH:
- 1/2 cup whole milk
- 1/2 cup water
- 8 tbsp 1 stick unsalted butter, cut into 4 pieces
- 1 tbsp sugar
- 1/2 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- FOR THE GANACHE:
- 3/4 cup heavy cream
- 3/4 lb 12 oz. bittersweet chocolate, finely chopped (a food processor works best)
