- 0.75 cup yellow onions thinly sliced
- 1 tbsp fresh flat-leaf parsley chopped
- 0.125 tsp fine sea salt
- 0.25 tsp freshly ground black pepper
- 1 tbsp fresh oregano chopped
- 0.5 cup low sodium vegetable broth low-sodium
- 0.25 cup Kalamata olives pitted, rinsed
- 1 cup grape or cherry tomatoes halved
