- 3 tbsp grapeseed or vegetable oil divided use
- 1 green onion (scallion) trimmed and thinly sliced
- 6 soba noodles 8-ounce portions
- 1 tsp agave nectar or honey
- 1 tsp wasabi paste or sriracha optional
- 2 tsp toasted sesame oil
- 2 tbsp rice vinegar
- 1 lbs baby spinach
- 1.5 tbsp light soy sauce
- 12 large shitake mushrooms stems removed and caps julienned
- 0.33 cup pickled ginger drained and tightly packed
- 1 Toasted sesame seeds
