- 1 tbsp Herbs de Provence dried
- 4 clove garlic chopped
- 0.5 small head green cabbage chopped
- 1 nonstick cooking spray
- 3 celery stalks diced
- 1 large onion peeled and diced
- 2 carrot(s) peeled and cut into 1 inch chunks
- 1 tbsp olive oil
- 2 parsnips peeled and cut into 1 inch chunks
- 2 small turnips peeled and cut into 1 inch chunks
- 1 small butternut squash (about 1 pound), peeled, seeded and cut into 1-inch chunks
- 1 tbsp sherry vinegar
- 1 tsp salt optional
- 0.5 tsp black pepper
