  • 1 3/4 cups small shrimp cleaned (I used frozen shrimp)
  • 1 stalk celery chopped
  • 1 carrot grated
  • 5-6 black olives chopped
  • 1/4 cup Italian parsley chopped
  • 1/4 cup olive oil
  • juice from 1/2 lemon
  • JUST BEFORE SERVING
  • salt to taste
  • Balsamic Vinegar
