- 2 cups finely grated carrots
- 3 tablespoons butter
- For the Cream Cheese Topping:
- 2 ounces light cream cheese (Neufchatel)
- 1/4 plain non-fat Greek yogurt
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Dash ground cinnamon
- 1/2 teaspoon milk
