Smoky White Bean Chicken Chili

A super simple, comforting chili recipe. Great for cozy nights on the couch.

Ingredients (12)

  • 1 (12-ounce) can tomatillos, diced
  • 2 (14 1/2-ounce) cans diced fire-roasted tomatoes
  • 3 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1 teaspoon cumin
  • 1/4 teaspoon white pepper
  • 1 teaspoon salt
  • 2 (15-ounce) cans white beans, such as cannellini, rinsed and drained
  • 2 chicken breasts, cooked and chopped or shredded
  • 4 slice smoked applewood bacon, cooked and crumbled
  • 1 cup beer
  • 1/2 teaspoon Tabasco

Directions

  1. Combine tomatillos, tomatoes, garlic, tomato paste, cumin, white pepper and salt in a large saucepan. Bring to a simmer and cook 30 minutes. Add beans, chicken, bacon and beer and cook 30 minutes. Stir in Tabasco. Makes about 10 cups.
