Maria’s Watermelon Gazpacho

  • 4 ½ cups seedless watermelon
  • 2 tablespoons fresh squeezed lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon salt
  • 1 to 2 cloves minced garlic
  • 1 cup ripe tomato
  • 1 cup peeled or unpeeled seedless cucumber
  • ½ cup total sweet yellow, red and orange pepper, cubed into ½ inch pieces (makes great color)
  • 3 tablespoons minced red onion
  • 1 tablespoon red-wine vinegar
  • 1/3 cup extra-virgin olive oil
  • Pepper to taste
  • 2 tablespoons minced cilantro or parsley
  • Pinch sugar
  • Mint leaves
  • ½ cup watermelon ½ inch cubed
  • ½ cup pineapple ½ inch cubed
  • ½ cup raspberries
  • Set aside cubed watermelon
  • Set aside cubed pineapple
