  • 1 Tbsp brown or coconut sugar
  • Kosher salt and freshly ground black pepper
  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • Breading and Chicken:
  • 1/2 cup flour
  • 3 eggs
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup heaping, grated Parmesan cheese
  • 4 chicken breasts
  • 8-10 oz. mozzarella cheese
  • Optional Topping:
  • A handful of fresh basil

  • 1/2 cup cherry or other small tomatoes
  • 2 Tbsp olive oil
  • Splash of lemon juice
