- 3-4 stalks celery
- 1 bunch carrots
- 1 large shallot
- 8-10 baby bell peppers
- 5 cloves garlic
- 3 bay leaves
- 2 cinnamon sticks
- 1/2 c red wine
- 1 tsp lemon zest
- 1 c vegetable or chicken stock
- 17 oz rigatoni giganti pasta
- Pecorino cheese
- Fresh basil
