  • 1 pound fusilli pasta
  • 1 10 ounce bag of frozen spinach
  • 1/2 white onion, minced
  • 2 cloves garlic, minced
  • 8 ounces cheddar cheese (or more!)
  • 4 ounces low-moisture mozzarella cheese
  • 4 Tablespoons butter
  • 3 Tablespoons flour
  • 1 Cup heavy cream
  • 1 1/2 Cups whole milk (you could use skim or whatever if that's all you have)
  • 1/2 Teaspoon paprika (optional)
  • 1/4 Teaspoon cayenne (optional)
  • 1/4 Cup bread crumbs (I used Panko, but use your fave)
  • Parmesan cheese, a good dusting on top before baking
  • Salt and Pepper
