- 2 large carrots, peeled and sliced into 1/4 inch pieces
- 2 red peppers, seeded and roughly chopped
- 1 rib celery, cut into 1/4 inch slices
- 3 cloves garlic, minced
- 4 Cups chicken broth
- 2 bay leaves
- 4 ounces spinach, chopped roughly
- 1/2 Cup frozen peas
- 1/4 Cup half-and-half or cream
- 2 Tablespoons fresh parsley (optional)
- 2 Teaspoons fresh thyme (optional)
