- 3 large carrots
- 3 medium onions

- 2 cups lamb or chicken stock
- 8 medium red or white potatoes
- 2 sprigs fresh thyme
- 1 tablespoon chopped fresh Italian parsley
- 1 tablespoon chopped chives
