
One-Pot Mexican Shrimp with Orzo and Zucchini
Ingredients (15)
- 1 pound medium shrimp that have been shelled and deveined
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 4 cloves garlic , pressed or minced, divided
- 1 tablespoon butter
- 1 tablespoon canola oil
- ⅓ cup minced shallots
- 1 ⅓ cup dry orzo pasta
- 2 cups chicken broth
- 1 cup water
- 1 10- ounce can diced tomatoes with green chilies and chipotle peppers , (I used RO*TEL)
- 1/2 teaspoon ground cinnamon
- Juice of 2 limes
- 1/4 cup chopped cilantro
- 2 cups sliced zucchini
