- 4 Tablespoons butter, plus a bit for the dish
- 1/4 Cup all-purpose flour
- 1 1/2 Cups warm (but not hot) milk
- 6 eggs, separated
- Pinch of Salt and Pepper
- Pinch of Cayenne (optional)
- 1 Cup total of grated cheese. I used about 1/2 Cup Parmesan and 1/2 Cup Pepperjack
