• 2 medium Florida purple sweet potatoes, peeled and diced small
• 4-6 Florida eggs
• 1 Florida bell pepper, diced small
• 1/2 sweet onion, chopped
• 1/2 pound smoked sausage, diced or sliced into discs
• 2 tablespoons fresh parsley, chopped fine
• Oil for cooking
• Sea salt and fresh ground pepper, to taste
