- 1 small yellow onion, chopped
- 3 cloves garlic
- 2 cups cilantro leaves, packed

- 2 tablespoons tahini
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and fresh ground black pepper
- 1/4 cup pork rind crumbs, or you can use regular panko crumbs
- 1/4 cup tahini
- 1/4 cup warm water
- 3 tablespoons fresh lemon juice
