Apple Crème Fraîche Pie Recipe

- One recipe Easy Pie Dough, one half shaped and chilled in a pie plate, the other rolled out flat and chilled on a floured sheet pan
- 2/3 cup crème fraîche
- 1/3 cup sugar
- 1 egg, lightly beaten
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon cinnamon
- 2 tablespoons flour
- 1/4 cup old-fashioned oatmeal
- 1/4 cup light brown sugar
- 5 apples, peeled, cored and cut into 1/4 inch pieces (choose a tart variety—Braeburn, Northern Spy, Fuji are good choices)
- Egg wash: 1 egg beaten with a big pinch of salt
- Additional sugar for sprinkling
