Slow Cooker Red Wine Braised Short Ribs

- 3 pounds bone-in beef short ribs
 - Salt and freshly ground pepper, to taste
 - 2 tablespoons olive oil
 - 2 small yellow onions, thinly sliced
 - 1 pound baby mushrooms, quartered
 - 4 cloves garlic, minced
 - 2 cups dry red wine, I use Cabernet Sauvignon
 - 2 cups low sodium beef broth
 - 1/2 teaspoon dried oregano
 - 1/2 teaspoon dried thyme
 - 1/2 teaspoon dried rosemary
 - 1/2 teaspoon dried marjoram
 - 2 bay leaves
 - Mashed potatoes or mashed cauliflower, for serving
