
Turkey Pot Pie
Ingredients (15)
- 1/2 tablespoon olive oil
- 1 large shallot chopped
- 3 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh sage
- 2 small celery stalks chopped
- 5 ounces frozen mixed vegetables
- 2 1/4 cups turkey or chicken broth
- 1/2 teaspoon chicken or turkey bouillon
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups small-diced leftover cooked turkey breast skin removed*
- 2 1/2 tablespoons cornstarch
- 1 prepared pie crust - dairy free if needed (I used my favorite whole wheat pie crust )
- 1 large egg beaten
